With natural fermentation and aging in large acacia wood barrels, the successor to the 2019 white Pinot Auxerrois is a complex, gastronomic wine. The nose is lively with citrus, spring blossoms, stone fruit, and a hint of toast. This extroversion continues on the palate with a combination of density and freshness. The acacia wood is beautifully integrated, giving the wine length and vigor. A touch of Pinot Gris and Pinot Blanc adds extra breadth and tension. A long period "sur lattes" and a low dosage of just 2g/l create a gastronomic and vinous sparkling wine. On the nose, notes of brioche and almond harmonize with citrus and ripe apple. The palate is elegant, and the long finish brims with freshness. With only 2,200 bottles produced, this sparkling wine is exceptionally limited.

This is the first sparkling wine from our own vineyard. Winemaker Pieter Raeymaekers opted for a balanced base wine with subtle aromas, allowing the second fermentation in the bottle and the extended time on the lees to work their magic. To highlight the refined character of the Brut 2019, a dosage of only 3g/l was chosen. This results in a gastronomic and vinous sparkling wine that combines brioche and almond on the nose with ripe apple. Het perceel Aux Echézaux ligt gesandwiched tussen de Grand Cru Charmes-Chambertin en de Premier Cru Clos des Ormes. En dat proef je in het glas. Het mooie jaar 2016 geeft wijnen met erg veel finesse en definitie. Frivole aroma's van sappig rood fruit zetten zich door in de mond waar ze geassisteerd worden door wat meer aardse toetsen. Les Chaffots is een perceel dat zowel Grand Cru als Premier Cru werd ingeschaald. Vanaf het grandioze Pinot jaar 2015 ouderde Frédéric zijn wijnen deels op Terracotta recipiënten en oude barriques. Dat resulteert in zeer zuivere, aromatisch erg precieze wijn. En ook het mondgevoel is zijdezacht met soepele tannines en een verfijnde textuur.
