A long period "sur lattes" and a low dosage of just 2g/l create a gastronomic and vinous sparkling wine. The mouth-filling mousse is exceptionally fine, with the dosage beautifully integrated. On the nose, notes of brioche and almond harmonize with citrus and ripe apple. The palate is elegant, and the long finish brims with freshness. With only 2,200 bottles produced, this sparkling wine is exceptionally limited.

Vinification is carried out in the same way as in Champagne, following the traditional method. The Chardonnay grapes are manually harvested and whole-cluster pressed, with separate vinification of the cuvée and taille. After bottling, the wine spent 36 months "sur lattes" for its second fermentation in the bottle. During disgorgement, it received a low dosage of 2g/l.Practical information
