This is the first sparkling wine from our own vineyard. Winemaker Pieter Raeymaekers opted for a balanced base wine with subtle aromas, allowing the second fermentation in the bottle and the extended time on the lees to work their magic. To highlight the refined character of the Brut 2019, a dosage of only 3g/l was chosen. This results in a gastronomic and vinous sparkling wine that combines brioche and almond on the nose with ripe apple. The mousse is very soft yet mouth-filling, culminating in an elegant finish brimming with freshness.

Vinification

The vinification follows the traditional method used in Champagne. Hand harvesting and whole cluster pressing of Chardonnay grapes with separate vinification of cuvée and taille. After bottling, the wine spent 40 months sur lattes for the second fermentation in the bottle. Upon dégorgement, it received a low dosage of 3g/l.
