Although 2021 was a challenging year, we are very pleased with this new cuvée. Our vision remains unchanged: hand-picking only the best grapes, whole-cluster pressing, spontaneous fermentation, and aging in acacia wood barrels. Minimal intervention for maximum output. The nose reveals spring blossom, citrus, and a light spiciness. On the palate, it begins round and juicy with mild acidity and a delicate richness. Ripe fruit and a well-integrated touch of wood finish with a fine bitterness. Elegant drinking pleasure at only 11% alcohol!

Vinification

The Auxerrois grapes are hand-harvested and sorted, followed by whole-cluster pressing. The spontaneous fermentation begins in stainless steel tanks and continues in 500-liter acacia wood barrels. After 10 months in barrels, the wine is bottled with minimal intervention.
