2022 was a very warm and stable year in the vineyard, resulting in ripe grapes with great density and depth. The processing of the grapes remained unchanged: hand-harvesting only the best grapes, whole-cluster pressing, spontaneous fermentation, and aging in 500-liter acacia wood barrels. The wine was bottled unfiltered to retain its texture and depth. Minimal intervention for maximum output. The nose reveals spring blossoms, citrus, and a hint of spice. On the palate, it is round and juicy with mild acidity and a delicate richness. Ripe fruit and a well-integrated touch of oak finish with a fine aftertaste. Characterful drinking pleasure at just 11.5% alcohol!

Vinification

The Auxerrois grapes are hand-harvested and sorted before whole-cluster pressing. The spontaneous fermentation begins in stainless steel tanks and continues in 500-liter acacia wood barrels. After 10 months in 3 to 4-year-old barrels, the wine is bottled unfiltered.
