Het perceel Aux Echézaux ligt gesandwiched tussen de Grand Cru Charmes-Chambertin en de Premier Cru Clos des Ormes. En dat proef je in het glas. Het mooie jaar 2016 geeft wijnen met erg veel finesse en definitie. Frivole aroma's van sappig rood fruit zetten zich door in de mond waar ze geassisteerd worden door wat meer aardse toetsen. Les Chaffots is een perceel dat zowel Grand Cru als Premier Cru werd ingeschaald. Vanaf het grandioze Pinot jaar 2015 ouderde Frédéric zijn wijnen deels op Terracotta recipiënten en oude barriques. Dat resulteert in zeer zuivere, aromatisch erg precieze wijn. En ook het mondgevoel is zijdezacht met soepele tannines en een verfijnde textuur. Bij het huis Delaunay konden ze Aligoté druiven kopen van een oud plot, hetgeen toch meestal garant staat voor een meer concentratie en diepgang. Deze wijn heeft dan ook een rijke, pure en kruidige neus waar de mineraliteit echte vuursteen aroma's met zich meebrengt. In de mond ook erg levendig en frisse. Hier geen saaie, onuitgesproken ('vanilla') Chenin Blanc, maar een wijn met complexiteit en lange afdronk. We krijgen een mooi vanille-aroma van de fermentatie op barrique, boterig mondgevoel door de malolactische omzetting en uitgesproken fruitaroma's van de fenologisch rijpe druiven. Dit is een serieuze Chardonnay uit de Côte Chalonnaise. De neus verraadt meteen zijn ambitie: dens wit en geel steenfruit, toast en geroosterde noten. Het rijk mondgevoel wordt ondersteund door voldoende zuren die spanning brengen in de wijn. De romige lange afdronk ontgoochelt niet.
