This is the first sparkling wine from our own vineyard. Winemaker Pieter Raeymaekers opted for a balanced base wine with subtle aromas, allowing the second fermentation in the bottle and the extended time on the lees to work their magic. To highlight the refined character of the Brut 2019, a dosage of only 3g/l was chosen. This results in a gastronomic and vinous sparkling wine that combines brioche and almond on the nose with ripe apple. Although 2021 was a challenging year, we are very pleased with this new cuvée. Our vision remains unchanged: hand-picking only the best grapes, whole-cluster pressing, spontaneous fermentation, and aging in acacia wood barrels. Minimal intervention for maximum output. The nose reveals spring blossom, citrus, and a light spiciness. On the palate, it begins round and juicy with mild acidity and a delicate richness.
