This is the first sparkling wine from our own vineyard. Winemaker Pieter Raeymaekers opted for a balanced base wine with subtle aromas, allowing the second fermentation in the bottle and the extended time on the lees to work their magic. To highlight the refined character of the Brut 2019, a dosage of only 3g/l was chosen. This results in a gastronomic and vinous sparkling wine that combines brioche and almond on the nose with ripe apple. This is the first cuvée from our own winery! We are very proud of this milestone. The wine boasts a ripe, exuberant nose of citrus, spring blossoms, and tropical fruit. This extroverted character continues on the palate with a combination of density and freshness. The acacia wood is beautifully integrated, adding length and zest to the wine. With natural fermentation and aging in large acacia wood barrels, the successor to the 2019 white Pinot Auxerrois is a complex, gastronomic wine. The nose is lively with citrus, spring blossoms, stone fruit, and a hint of toast. This extroversion continues on the palate with a combination of density and freshness. The acacia wood is beautifully integrated, giving the wine length and vigor. A touch of Pinot Gris and Pinot Blanc adds extra breadth and tension.
