This is the first sparkling wine from our own vineyard. Winemaker Pieter Raeymaekers opted for a balanced base wine with subtle aromas, allowing the second fermentation in the bottle and the extended time on the lees to work their magic. Although 2021 was a challenging year, we are very pleased with this new cuvée. Our vision remains unchanged: hand-picking only the best grapes, whole-cluster pressing, spontaneous fermentation, and aging in acacia wood barrels. Minimal intervention for maximum output. The nose reveals spring blossom, citrus, and a light spiciness. On the palate, it begins round and juicy with mild acidity and a delicate richness.
