Op woensdag 22 april nodigen we je uit voor een unieke culinaire ervaring. Een exclusief winemaker’s diner met Aurélie Ledy, de wijnmaakster achter het veelbelovende Bourgondische domein Ledy Vins, bij restaurant Seir in Kasterlee (Gault&Millau 15/20). Een avond waarin gastronomie en wijnkunst samenkomen, en je als eerste de nieuwste creaties van Ledy Vins kunt ontdekken.

Op donderdag 23 april verwelkomen we je bij Restaurant De Fakkels in Sint-Truiden voor een bijzondere culinaire avond. Tijdens dit exclusieve winemaker’s dinner staat Aurélie Ledy centraal, de drijvende kracht achter het Bourgondische domein Ledy Vins. Laat je onderdompelen in een harmonie van elegante gerechten en karaktervolle wijnen, zorgvuldig op elkaar afgestemd voor een unieke smaakbeleving.

A long period "sur lattes" and a low dosage of just 3g/l create a gastronomic and vinous sparkling wine. On the nose, notes of brioche and almond harmonize with citrus and ripe apple. The palate is elegant, and the long finish brims with freshness. With only 2,200 bottles produced, this sparkling wine is exceptionally limited.

This blend of Auxerrois and Chardonnay was vinified with drinking pleasure in mind. On the nose, we find aromas of citrus, white stone fruit, and spring blossoms. The palate is bursting with freshness and vibrancy, carrying that same energy into a long, juicy, and fruity finish.

Minimal intervention for maximum output. The nose reveals spring blossoms, citrus, and a hint of spice. On the palate, it is round and juicy with mild acidity and a delicate richness. Ripe fruit and a well-integrated touch of oak finish with a fine aftertaste. Characterful drinking pleasure at just 11.5% alcohol!

Manual harvesting of only the best bunches, whole-cluster pressing, spontaneous fermentation, and ageing in 500 L acacia-wood barrels. On the nose, we find spring blossom, citrus, and a light spiciness. The palate opens round and juicy with gentle acidity and a delicate suppleness. Ripe fruit and a well-integrated touch of oak lead into a fine, elegant finish.
