Vinification
The Auxerrois, Pinot Blanc and Chardonnay grapes are hand-harvested and carefully sorted before undergoing whole-bunch pressing. Fermentation takes place in stainless steel tanks, after which the wine is aged on its lees for 10 months before the final blend is selected. The wine is then hand-bottled and finished by hand.
