On Friday, August 14 and Saturday, August 15, Wijndomein Valke Vleug and Jonas Kellens bring a rare Japanese sushi experience to Belgium. Chef Kazuya Matsumoto presents an omakase experience that is almost never experienced this intensely and from such close proximity. You will be seated near the chef and his team, watching the sushi come to life. Rice is shaped by hand, fish is sliced only at the very last moment. What you eat is decided in that very moment.
The New Generation

Chef Kazuya Matsumoto (29) grew up in Chiba, just outside Tokyo, where he began his training as a sushi chef at the age of 16. For five years, he mastered the foundations of traditional Edomae sushi under the guidance of his mentors. He then spent four years working as a pastry chef, further refining his precision, technique, and attention to detail.
His culinary journey later brought him to the Netherlands, where he became Executive Chef of an omakase restaurant, earning recognition for his pure and refined approach to sushi. Today, he stands on the threshold of a new chapter. Even before the doors of his own restaurant, Sushi Oodo in Amsterdam, open, he brings his personal vision of omakase exclusively to Wijndomein Valke Vleug.

The Art of Sushi is not a traditional menu. It is a rare glimpse into the world of Japanese omakase culture, as experienced at sushi counters throughout Japan.
During these evenings, Chef Kazuya Matsumoto will serve five refined dishes and a carefully curated selection of ten sushi pieces, composed from the finest ingredients available that day and at their absolute peak.
From the selection of ingredients and the preparation of the fish to shaping the rice and finishing each dish, everything is executed with the utmost precision and attention to detail.
Each course is accompanied by a carefully selected range of sakes from Shinshu Sake and wines from Wijndomein Valke Vleug and Vinetiq. Not a traditional pairing, but two ways to experience the same moment.
